Milky Ginger Tea


Milky ginger tea is what mostly elderly clients requested back then when they go for chitchat session at kopitiam. Sweetened condensed milk is used to sweeten this tea rather than sugar. Refreshing taste of ginger coupled with hot tea is very welcome indeed especially on rainy days.

Milky Ginger Tea

A cup of hot creamy Ginger Tea

What you need:

  • 4 tea bags or 4 tsp of tea leaves
  • 1 liter of hot boiling water
  • Condensed milk to sweeten to taste

Ginger infusion:

  • 120g mature ginger (a large knob)
  • 250ml water (1 cup)
Method:
  1. Prepare infusion by boiling crushed peeled ginger with a cup of water.
  2. Simmer for ten minutes and strain.
  3. Pour hot water into a jug with tea bags or tea leaves to make a strong tea.
  4. Strain into another jug (preferably ceramic that has been preheated by swirling hot steaming water inside it). Discard hot water and add condensed milk to taste.
  5. Pour ginger infusion into the jug.
  6. Serve in tiny clear glasses.
  7. Makes 4 glasses.
