Lime Pickles


Lime pickles, when you mention the word to a Malay cook, can either mean two things. The first is the lime itself being pickled, which results similar to lemon pickles.

The second being a type of cooked pickles which has the pickled fruit as an ingredient. This is also known as achar buah or achar limau.

I know plenty of these pickles that are marketed in bottles are of Indian origin, sometimes they are also called as chutney. Some of them are prepared by exposing the lime in brine in sunlight, using the sun heat to mature the fruits rather than using stove fire.

It takes some skills and trial and error to make the perfect lime pickles. It is such a welcome condiment for rice dishes.
