Gingerbread Pancake


Gingerbread pancake is different from crepe. It is an American style thick pancake usually served for breakfast, while crepe is thinner and does not use any rising agents. In Japan, it is called dorayaki, which is supposed to be the favourite of Doraemon, a cartoon character who is loved by all children. Dorayaki, however, has a jam filling inside it. My children are nuts about this pancake and normally one is not enough! 

Gingerbread pancakes

  • 1 1/4 cup all purpose flour
  • 1 tbs sugar
  • 1 tsp baking powder
  • 1 tsp ground ginger
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon powder
  • 2 tbs molasses or golden syrup
  • 1 tbs vegetable oil
  • 1 cup buttermilk or sour cream
  • 1 egg, lightly beaten

Method:

  • Combine all dry ingredients in a large bowl.
  • In a separate bowl, whisk together the molasses, oil, buttermilk and egg.
  • Pour whisked ingredients into flour mixture. Whisk to mix and remove lumps.
  • Lightly grease a girdle or pan over low heat. Pour in batter. Cook pancake three minutes on each side.
  • Serve with jam, butter or honey.
